Feuilletine (foo-ye-teen) are crispy and buttery wafer-flakes made from crushing crepes dentelles, a very fine biscuit. They help to add an addictive sexy crunch to all kinds of desserts. Feuilletine is extremely versatile - mix it into ganaches and mousses, or use it in layered cakes to add texture. A classic use is to mix feuilletine with hazelnut paste and melted chocolate to form a crunchy flavourful base for cakes.
