Dark chocolate snobs, this one's for you. GUANAJA 70% is made with a blend of Crillo and Trintario, two of the three grand cocoa varieties. It is slightly sour, has a deep earthy bitterness, fruity notes, and just a smidge of sweetness. Tight and composed, this chocolate is perfect for mousses or ganaches, where the deepest chocolate flavour is needed.

Storage: Keep chilled in a dry and cool environment. Occasionally there may be light-coloured streaks on the surface of the chocolate. This occurs naturally and is a characteristic of pure chocolate. It will disappear when the chocolate is re-melted.
